Soupe a l’Oignon (French Onion Soup)

Bill:  Jill was inspired to make some French Onion Soup this weekend.  She noticed that we had 3 containers of chopped onions in the freezer.  It was a good day for soup since it was only 40 degrees with a wind chill in the low 30s.  She used this Soupe a l’Oignon recipe from The Best of Cooking Light Soups and Stews cookbook.  It took a while to caramelize 6 cups of onions.  You can tell from the picture below where she’s reading her book.  The soup was topped with baguettes and cheese broiled in the oven.  It was really good.

Black Bean Soup with Chorizo

jillpickle:  After having some great meals this weekend in Door County it was time for one of our favorite soups.   Jill made Black Bean Soup with Chorizo from Cooking Light.  This is a really good soup with a little zip to it.  Not quite as spicy as it could be since we used “mild” Chorizo.  Jill also added 2 carrots and smoked paprika which adds a really nice flavor.  She left out the coriander.  The soup is topped with cilantro.  I also shredded some Parmesan cheese on top and added a dollop of mascarpone cheese to cool off the spicy flavor.  You could also use a little sour cream instead of the mascarpone cheese.

We had some really good French bread and Brie at the Base Camp Coffee Shop in Sister Bay this weekend.  So… we decided to have a baguette with Brie and roasted garlic with a little salt on top for an appetizer and side dish.  Really great meal!

Roasted Vegetable Soup

Bill:  It’s that time of the year again for some nice warm soup.  One of the great recipes that Jill found is for Roasted Vegetable Soup.   The soup was pretty easy to make and tastes great.  I used Matt’s suggestion to roast the vegetables on parchment paper on a cookie sheet.  Much easier to clean up!

I decided to finish it with the same two special toppings that we use on Creamy Red Pepper soup.  One is baguette croutons which are nice and crunchy warmed up in a fry pan with a little olive oil.  The final topping is a dollop of mascarpone cheese.  The cheese is a nice sweet compliment to the soup.

Roasted Vegetable Soup

Creamy Red Pepper Soup

Bill:  After eating lots of yummy treats last weekend it was time for some healthy soup.  I made Creamy Red Pepper Soup from the Food Network’s Giada De Laurentiis.  The soup was pretty fast to make and tastes great with two special toppings.  One is baguette croutons which are nice and crunchy and the final topping is a dollop of mascarpone cheese.  The cheese is a nice sweet compliment to the soup.
