White Chicken Chili

Bill:  With Matt coming home last weekend, I decided to make some chili.  This White Chicken Chili recipe is from a friend at work and came highly recommended.  I added 4 cloves of garlic instead of 2 (Jill likes garlic!).  I used about 1/8 teaspoon of chili powder so it wasn’t too spicy.  As the recipe suggests, I mashed the 3rd can of Great Northern Beans to thicken the soup.  Next time, I think I’ll mash all the cans of beans or use the immersion blender on the whole pot of chili before adding the chicken.  The chili was very tasty topped with cilantro and shredded cheese.  Jill roasted some garlic which we had on artisan bread which was really good too.  She also made apple crisp for dessert.  Yummy!

  3. Mucho green stuff in it. Sounds delicious though. Maybe I could eat it with my eyes closed…
